Its called "head cheese". All the unused inards of the hog, chopped up and boiled down inside the head "skull". The result , I suspect from all the collagen, comes out in a gelatine like form. I have never had the stomach to try it, but the "old timers" eat it right up. Some of the more exotic things I have sampled: Bear, alligator, rattle snake, sundried squid - kind of like chewing salty rubber, and more common wild game like whitetail deer, elk, carribou, ducks, geese, pheasant, etc. I havn't gotten the guts (pun intended[}:)]) to try it yet, but we have a local restaurant that will serve authentic haggis, if given 24 hour notice. Maybe someday I will have the stomach to "have the stomach" (for those who know what haggis is). <br /> <br />Admiral
