What is the procedure for connecting different track codes (ie code 80 to code 55)? I have heard of transitional rail joiners, but are they necessary? Thanks

If you don't use them, the tops of the rails will not be even. The transitional joiners are bent to be able to connect the two sizes together and maintain the track level.
How else would you join them?

Another technique is to take a regular rail joiner code 80 in your case, flatten one end,solder the code 55 rail on top of the flattened end and then slide the other end onto the code 80 rail. If necessary file/grind smooth.
There are also transition rails where one end is the larger code and the other end is the smaller code.
