Mid South Hobbies on White Station and Summer Avenue.
Many railfan on Kentucky Street downtown as it is close to the Harrahan bridge crossing the Mississippi River.
There is a Yahoo group dedicated to railfanning in Memphis, memphisrailfans:

There is now a railroad museum at Central Station downtown. There is a On30 layout at this museum. Plus you may see the City of New Orleans at the Amtrak station there.

City Train Watching Spots
-Memphis has a great trolley system to get around on.
-There is a large yard near Hyde Park with a diamond and lots of traffic, but watch your surroundings.
-Large yards near Elwood Cemetary and near T.O. Fuller State Park
-On GE Patterson Ave, where the farmers market is now, is the former Memphis Grand Central Station.
Food
A person has to eat while railfanning so.....
BB KING on Beale St. has some great food.
Lots of great places on the river front, and thats not mentioning the other stuff like sports/entertainment/etc
Have Fun
