My sheet cork arrived rolled up quite tight. It does not want to unroll. I carefully did open it up and I have weights on the ends to keep it flat.
Will the cork eventually flatten itself or must I wet it or something.

Just let it set,flat,for awhile,until,it get's used to the surrounding temperature and you should be fine. All rolled up cork will do that. What I usually do is, lay it out flat the opposite,of how it was rolled up, seems like it works faster that way.

I assume you're going to glue the cork to your layout. If you're going to glue it down, there should be no trouble cutting it to fit the space, or, if you're using it for low-profile roadbed, like I do, cutting it into strips. At first it's a little unruly, but it eventually gets to a manageable "flatness" that you can work with.
