I have a number of the subject cars to change from the kit coupler to Kadee.
I note the Kadee conversion chart offers several different MSC type options, including the venerable #5.
I tried a #5 - it works but about 1/32" of the copper colored 'tension plate' that is part of the Kadee system pokes forward of the coupler box. Slightly unsightly.
Has anyone tried the various Kadee options for these cars & found one that is a tidier fit?

I agree, paint the copper a flat black and you won't notice the difference.
Use the #148 whisker spring coupler. No copper spring. The chart you are using was probably made before the #148 was on the market.
I use the Kadee old time 711 coupler. Below are two photos of the 711 and a regular size coupler most people use.

Kadee has a jig for assembling the 711 old time coupler. I am 70 and I can still assemble these couplers.
