I would like to know what the general preference in using an 8x4 extruded foam sheeet.Blue(by Dow) or pink(by Corning Ware.) Do they have different texture and who has the better quality
Some of us more manly types call it Blue or Salmon
In all seriousness though, I don't think there is much of a difference. It's more of what the local store has on the shelves. But I stand to be corrected.

For our puposes, same stuff. It appears Owens-Corning changed their manufacturing process to be more environmentally friendly and it has resulted int he pink stuff looking more like a hot pink or fuscia color
It all gets covered by paint anyway.

There really should be no difference. They should act the same. My local Lowes caries the blue {where I got mine} and my local Home Depot carries the pink. As was said, it all gets covered anyway.

After long and careful thought, they have convinced me. I have come to the conclusion that they are right. The aliens did it.
If you can get the pink do so, it actually blends into scenery much easier. I'm using the blue stuff with zipp texturing scenery over it and every now and then some blue foam peeks thru a crack or gap and is very visable, if it was the pink stuff it would much less visible in my desert scenery. The blue was the only stuff I could find out here.

I am a fan of the "salmon" colored foam as the Home Depot is about three miles closer to my house than Lowe's. Otherwise it really doesn't matter.
Well capricorn if you live in California there are few distributors and those that do want us to pay for dinner for four at the Claim Jumper for one sheet.
Kidding aside, I like the Pink stuff because I build modules that are 24" wide and the Pink (Owens Corning) is already scored for two 24"x8' or three 18"x8'. I snap mine by pushing the entire piece up against an outside corner of a wall, like my garage and it snaps with a fairly clean edge. Not perfect put workable.
Another point of concern is that these foam pieces seem flat but they are not so if you are counting on them to help insure your tracks are flat and true be mindful of the possible fluctuations in each piece.

You have already stated the major difference. Dow makes the blue stuff (Styrofoam). Owens corning makes the pink stuff (Foamular)
All of it no matter the manufacturer comes in various sizes and configurations. What is found at the big box store is the type that they can sell the most. There is Square edge, tongue and groove, 4 x 8, 2 x 8. It comes in various thicknesses depending on the product line. Compressive strength and R value are the same on similar thicknesses so basically, just the color is different.
I prefer the pink because that color is just annoying and it further motivates me to quickly cover it up. I think that's why they paint Dunkin Donuts a similar shade so folks won't hang around long inside. Both blue and pink forms work and other than color I haven't noticed any difference between them.
