I have some 2 rail Weaver Models freight cars, I'd like to convert for 3 rail operation. Besides the main manufacturers (Lionel, Atlas, MTH, Weaver), is there another good manufacturer where I could get some 3 rail trucks and couplers?

Possibly Williams, but check carefully before you buy. Weaver cars have a different bolster height that may prevent a different brand replacement. However I'm not sure about their recent cars. but check anyway.

I agree with sir james I,

I bought a weaver hopper, which had 'Weaver' three rail plastic trucks.

Even, though I replaced the 'Weaver' three rail plastic trucks, with 'Weaver' die-cast metal three rail trucks, I still had a problem attaching both trucks.
I, eventually, attached both trucks having to resort to 'c'-old ingenuity. 

So, more, or less, you might have a problem using a different brand truck on a Weaver model item.
