I doubt there is anything Amtrak can do in the current situation to gain support; however it is important that Amtrak not do things that will loose support. And I don't see how Amtrak can stop running trains without alienating members of Congress. Actually I think Amtrak is attempting reforms by creating some new management positions to give more oversight to areas that have been criticized. However, I doubt the anti Amtrak people will change.
As far as modifying Amtrak by eliminating dining car service I think Amtrak could consider it. And perhaps Amtrak is considering it by appointing a new person to oversee it as described in News Wire. What happens remains to be seen.

Do you have any evidence that Congressman MIca will change his "Holy Jihad against Amtrak" based on Amtrak's attempts to reform? Or will he consider such attempts an admission of guilt and continue his attacks? He is still in the Congress and still on the House Transportation Subcommittee.

Oh, for God's sake I've covered this already. Outsource it. The days when food service was a required loss leader for a given railroad's internal 'catering' operations are long, long past. And there is no need to try to resurrect them at Amtrak budgeted expense.
At the very least, the Subway operation (designed to fit into a standard 20' storefront) could be easily adapted for a buffet car. Mc Donald's and Burger King involve more manipulation, but sized equipment could be easily produced or adapted. Who wouldn't love a Bloomin'Onion or other tantalizing tastiness as part of the dining experience ... rotate concessionaires through by day or week, depending on what's best in their menus.

Darden. They are the largest chain. They are everywhere. Pre-plate the food and deliver it en route. in a cart with wheels. Just like dinner trains - and airlines. You order your meal when you buy your ticket.
This is really simple. You don't need a kitchen on a train. You don't need attendants taking up very valuable space sleeping on a train. If you need any at all, have them sleep in hotels.

In an ideal Amtrak I think you have the best solution, Don. Pre ordered food on a cart would allow for a real variety both in quantity and quality. It could be a full course meal with wine or a hamburger and soft drink or anything in between.
The one thing needed would be to show the car and seat number along with a ticket number but that certainly could be done.
