During the Winter 'Season', the B&O would furlough Dining Car Crews - Steward's and cooks, down to waiters. Those furloughed B&O dining car crews would then go to the ACL and SAL and staff their Dining Cars with their Winter Season snowbird rush, returning to the B&O in the Spring.

Judging by my one trip on the Mainstreeter, NP food was great. But many ACL and SAL trips indicated their food was great also, and the menu and crew should match the car itself.
If you restore a dining car - staff it and serve dinner - The Atlantic Coast Line way.
