Going to do some reserch on this and planing on looking for remains of carfloat docks next time I am in NOLA.
Will your plane be able to fly under the bridge(s)?How much 80-or-more-year-old neglected/abandoned infrastructure are you planning to find?As with other projects, such as weekend trips on Metra, I would so do the research first!

With the constant scouring action of the river, and the constant rebuilding and reenforcement of the levee system, I doubt there would be anything left to see.

Google Earth has excellent images of the area. Good place to look for remnants before putting your foot on the ground.

Ok Levee now that being said you could ride a bike on the levy from NOLA to Baton Rouge LA or hike it if the vodoos are coming after u!
At my age, I'm pretty sure I'd find that ride taxing.
