Hello and greetings from Norway! It's been some years since last I visited these forums, but I'm now on a little personal mission and I hope you can help me out!
A couple of years ago me and some friends spent a week trainspotting in Germany in the Hannover area. During this time we spotted 4-5 trains loaded with US Army military equipment heading westbound, as well as one empty eastbound train. Ever since I've wanted to create a similar train myself. Please excuse the shameless promotion of my own videos, but if you look at below videos you can see what I'm talking about. I've included the timestamp for the transport for each video.

I'm not looking to replicate a specific train, but I want to create something inspired by what I have seen. However I currently don't have any of the military equipment needed to do so. I'm interested in all sorts of vehicles, but also containers as seen in the second video.
I was very excited when Artitec announced in their 2020 catalogue two train load versions of the Bradley fighting vehicle. However now that the models are finally available, I did a bit of additional research and it seems like these are older variants, and that more recent versions are quite different, and would therefore not be suitable for a more modern train. Am I correct in that conclusion? Below links to the Artitec models.

Now that we got the whole backstory out of the way, my questions is does anyone know any specific models of such military vehicles/equipment that are available, or any specific manufacturers of such equipment that I should check out?

Yngvet seems like these are older variants, and that more recent versions are quite different, and would therefore not be suitable for a more modern train.
The M2/M3 has seen a lot of in-service and rebuild upgrades. The biggest visible difference is that the M2 from Artitec still has the old MG ports in the hull side. These have been plated over with the newer armor upgrades. The turret details have also changed. However, the M3 is closer to the currrent version, at least at a quick glance.

I'm unsure what the in-service timeline on all these are. Germany-based units are frontline for NATO, so likely are fairly up to date.
