FUN, yet realistic Model Railroading action

hello once again,
I have a question which will probably be said that i can answer more than anyone can here, but ill give it a shot;
I am currently getting into prototypical paperwork for my n scale layout. However after alot of thought, I have some questions about the auctual placing of cars, im wondering during an operating session, when cars are staged or placed at a certain spot and that cars wabill is said that when its empty to send it to the freight yard, but how can you make out the fact that the company used all the materieal in that car? i can understand with box cars because they are easy to say ,okay there loaded or okay, well now there empty, or this one has electronics in it and this one has train parts, but what do you do with gondolas, and wood cars, pulpwood cars, and other types of cars?
i knwo i can prob answer this better my self because it is my railroad but i could really use the help of someone who has done several running sessions.

Typically a shipper receiving a load of something sent on such a car would not use the car to store it--they'd transfer it to their own warehouse immediately, rather than leaving it in the car. So it would work just like with boxcars.
