For BNSF go to the link below, press the search button, enter 'locomotive roster" in the search box. It will comeback with a 2003 list and another with recent additions, plus more.

I don't know about UP, I've never dealt with them.

For NS, I like to check www.nslocos.com. He is pretty exhaustive. For most locomotives he also has a picture of the locomotive either in NS paint or in the previous owner (like Conrail). He recently updated his list.

I just checked the website, he has 2,785 NS locomotives on his list right now. He updated the site on Jan. 1, 2005.
