I'd like to do 10 or so at a time. What would be a good way of holding rolling stock so I can weather them and then leave them to dry without touching them with my fingers?

Simple. Weather everything but the roof, and hold onto it and the frame. When the body is dry, weather the roof. That's how I weather my N scale stuff, but I use washes and drybrushing. If you're using an airbrush, remove the frame and stick the body onto a 1x2.
