Has anyone built a Super-7? I need info on how to kitbash a B40-8 into a Super-7. What else do I need? Does anyone know of any websites with pictures of them?

I'm not sure about what changes you would need to go from a B40-8 chassis to a B23-7, but you can just start with a Bachmann shell if you want. That would probably be easiest as a starting point, then add details.
Here are the Super 7 specs of the B23-7.

Doug;
A B40-8 is much longer than a Super 7 B23, but the general shape is correct. You'll have to do some cutting. For the chassis, you'll want a Bachmann B23-7 or B30-7 or an Atlas U23B.
