If I change one or more CV that has to do with say, BEMF (ie: CV55), does/can that automatically change other CVs that I'm not aware of?
Check your documentation is the best advice. Some CVs, when disabled, will cause other CVs to become active. For instance, if you disable a speed table, then many decoders will revert back to a basic group of min, max, mid-range CV settings to govern speed. So what ever you have in those settings will become active instead. Not exactly changing them but enabling other functions.

After giving this more thought, I took a look at the CVs I printed out for each of the four locos from the OEM sound decoder. There's quite a few differences between them.
Since one loco's sound doesn't work at all, and another, pressing F2 (horn) turns the sound off (while pressed), I'm wondering if the OEM DCC "plug" needs to be installed in order to reset the sound decoder back to factory default?
Initially I just removed the (new) DCC motor decoder (8 pin decoder plug left empty) and put the loco on the programing track to reset the sound decoder.
Looks like I might have to start the whole process over?

It's a BLI Blueline sound decoder/light board (originally with the BLI DCC "plug" installed, now removed) with Digitrax DN146IP installed.
No, except when otherwise stated, changing one CV does not alter another. I can;t think of any off the top of my head that do. You DO have things like CV29, depending ont he value the loco will use the value of CV1 as the address, or the calculated value from what's in CV17 and CV18. But changing any of those does not change any of the other.

Tsunami sound decoders will chance CV29 when you touch CV1 to set a new address.

Of course if you're "piggybacking" - using separate sound and light/motion decoders, both set to the same ID, you need to be sure you're not changing CVs on both decoders at the same time. If you're trying to change CV 34 on your motion decoder, but you change CV 34 on both, it could affect things you didn't expect.
You may need to say get the one decoder set the way you want it, then 'lock' it so you can adjust the other decoder without affecting the first one.
