I was wondering if I could use CAT 5 cable to expand my system rather than buying their add-ons? I have access to CAT 5 cables and jacks, so this would be cheaper.

I hope so. I've just been checking into this and it looks like RJ-45 jacks and Cat-5 should work. MRCs fascia plates are not only pricey but have a bad case of HDBS (Hot Dogs & Buns Syndrome -- 3 ports on the command module and 2 on their fascia plates!)
