I was hoping to add a smoking chimney to my outdoor brewery complex. Does anyone have a recommendation about what type of smoke unit to use, and how to wire it up (with what batteries) to work inside a structure?

Since you have lots of room and no with weight considerations I would a SLA (sealed lead acid battery) like those found in UPS units. They have a big capacity for the money.

besides that you will just need wire, the right connectors (not sure what the smoke units need and alligator clips would work fine for the battery) and an on/off switch.

The Aristo smoked unit will run about 20 minutes a filling and I would use only the Aristo smoke fluid.
