My question concerns the sweeper man that comes out and sweeps when activated over an uncoupler section. If the car is stopped over an uncoupler section and the button is pressed, the door will open and the sweeper man will go to work. I assume that the door will now stay open, but if the button is pressed again, and again will the man sweep again, or is this a one time event until the door is closed?

It is a one time event.
When, the button is depressed, the door slides open and the sweeper figure pops forward to the doorway.
To repeat, the door has to be carefully slid closed, which causes the man to return inward, in a backward motion and the triggering mechanism is reset.

It might not be clear to some folks reading this thread that the original Postwar 3434 poultry car came with either metal or plastic trucks, depending on the year of manufacture.

You are correct, I did not specify the material composition of the trucks, as such:
"Bar End"=Metal(Older); &"AAR"=Plastic(Newer).
